Tasty Thursday: Pancetta, Asparagus Pasta with Pine Nuts

This recipe is one of my all time favorite weeknight pasta recipes. It is healthy, light and full of flavor. It is a Cooking Light recipe, although you would never know it, from March 2010.  I have made it for several people and have had rave reviews each time.  This week, I made it with Prosciutto instead of Pancetta.  Both were tasty, but if you can find Pancetta I recommend it.

Pancetta, Asparagus Pasta with Pine Nuts

serving size: 4 servings

Ingredients:

  • 8 oz. of penne pasta
  • 1 lb. of asparagus, trimmed into 1 1/2″ pieces
  • 1 tsp. minced garlic
  • 3 TBSP. pine nuts
  • 2 oz. diced pancetta (this week I used Proscuitto)
  • 2 TBSP. of fresh lemon juice
  • 2 tsp. of olive oil
  • 1/4 tsp. of pepper
  • 1/4 c. of Parmesan cheese

Prep:

Pre-heat oven to 400.  Spread pine nuts onto cookie sheet and bake at 400 for 3 minutes, until golden.  Remove and place to the side.  Next, arrange pancetta on cookie sheet and bake at 475 for 6 minutes, until crispy.  Remove from oven and set aside.

Cook penne pasta according to the directions.  Add asparagus to the pasta water during the last 3 minutes.  Drain pasta and asapargus.  Mix minced garlic in with the pasta and asparagus and toss.

Combine lemon juice, olive oil, salt and pepper using a whisk to mix.  Pour lemon juice mixture over the pasta with asparagus and garlic and toss well.

Sprinkle with pine nuts, pancetta and Parmesan cheese.   Enjoy!

Tell Me Tuesday…BAM or SLAM!? Your Room Style

BAM! for Bubble Lighting

This week, I want to mix things up a little bit.

I love color, but when it comes to paint I typically stick with neutrals on the wall, bringing in color through art and accessories.  Earlier this week, I was reading through the March’s issue of House Beautiful on color and color combinations and thought today it would be fun to get a feeling for your color style…

Are you drawn to rooms that are bright and bold, soft, soothing pastels, or earthy neutrals?

Kitchen Update…A Sneak Peak

kitchensneakpeak

I hope you had a terrific weekend.  I spent a portion of my weekend working on the kitchen.  I finally broke down and painted!  Originally, I had planned to paint the room a dark charcoal.  Hoping for a deep, matte charcoal, I chose Knight’s Armor  by Olympic as the final color.

However, part way through the first coat I realized that it was 1. not bold enough and 2. had a bit of a navy undertone.  After going back to the drawing board, I decided to go BLACK.  I chose a warm black by Sherwin Williams, SW 6991 Black Magic.

As soon as I first strokes went up I knew it was the right choice.  I finished painting yesterday afternoon and love the dramatic changes!  After the final touches were in place I  briefly thought to myself… maybe I should paint every room in my house black…Before starting, I was nervous to go black.  I was afraid it would be too much, but I think I have found my new favorite wall color.  It feels so fresh and contemporary.  The charcoal was not bold enough for the space, it felt drab.

I still have a little work to do in the kitchen before the final reveal, I can’t wait to share!

Would you be bold enough to go black?
