Tasty Thursday: Homemade Chicken Enchiladas

This is by far the best chicken enchilada recipe I have made at home. I originally found the recipe on Skinnytaste, but have altered it to suit my tastes. I think the kick in the enchilada sauce is what makes this recipe so amazing!

Homemade Chicken Enchiladas

serving size: 8 enchiladas

Ingredients:

For the sauce:

  • 2 garlic cloves, minced
  • 1-2 tbsp chipotle chilis in adobo sauce
  • 1-1/2 cups tomato sauce
  • 1/2 tsp chipotle chili powder
  • 1/2 tsp ground cumin
  • 3/4 cup fat free chicken broth
  • kosher salt and fresh pepper to taste

For the chicken:

  • 8.5 oz. of shredded chicken
  • I c. onion, diced
  • 2 garlic cloves, minced
  • 1/4 c. of cilantro, chopped
  • 1/2 can of black beans, drained
  • 1 tsp. of cumin
  • 1/2 tsp. of dried oregano
  • 1 tsp. chili powder
  • 1/3 c. of chicken broth
  • 1/2 c. of tomato sauce
  • 8 flour tortillas
  • 1 c. of extra sharp cheddar cheese

*Typically, I make this recipe right after I have cooked a whole chicken in the crock pot.  However, you can easily pick up a roasted chicken at the grocery store or cook 2 breast halves and shred.

Prep:

Pre-heat oven to 400.

While the oven is pre-heating prepare the sauce.  In a medium sauce pan saute garlic.  Add chipotle chiles, chili powder, cumin, chicken broth, tomato sauce, salt and pepper.  Bring to a boil.  Reduce heat and simmer approximately 10 minutes, until thickened.  Set-aside.

Next, heat oil in a large skillet, saute onions and garlic until soft, approximately 2 minutes.  Add chicken, black beans, cilantro, cumin, oregano, chili powder, tomato sauce and chicken broth.  Cook 5 minutes and remove from heat.

Fill each tortilla with 1/3 cup of the chicken mixture and roll the tortilla, place in a glass baking dish, seam side down.  Repeat.

Once your dish is full of your enchiladas top with the enchilada sauce and cheese.  Cover with Aluminum foil and bake for 20-25 minutes.  I always top mine with a dollop of sour cream, they are heavenly.
