Tasty Thursday: Pesto Minestrone Soup

Today, I would like to share one of my all time favorite soups.  It easy easy and very healthy.  My friend Harmony gave me the original recipe, but I have altered it a lot to satisfy my taste.

Healthy Minestrone Soup

Ingredients:

  • 1 c chopped squash
  • 1 c chopped zucchini
  • 1 c chopped onion
  • 1 c chopped green pepper
  • 3 cloves of garlic
  • 1 bag of frozen mixed veggies
  • 32 oz. of chicken stock ( I keep frozen bags of homemade stock)
  • 1 can of diced tomatoes
  • 1 bay leaf
  • 1 T fresh parsley, chopped
  • 1 T pesto (this is the key ingredient, it adds a lot of flavor)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 can of garbanzo beans, drained and rinsed

 Prep:

Heat a large saucepan to medium-high heat, coat with a touch of olive oil.  Add veggies and saute until veggies are tender.  Stir in chicken broth, tomatoes and bay leaf, bring to a boil.  Reduce heat and simmer for 15 minutes.  Discard bay leaf.  Add parsley and the rest of the ingredients to the saucepan, cook for 5 minutes.  Serve hot.  The recipe also calls for 4 c of spinach to be added at the end, sometimes I add it, sometimes I do not.

    This sounds absolutely heavenly…it’s been so freezing here and all I’ve wanted to do is eat hot soups and cuddle up in a blanket! Of course neither have been happening, so we need to remedy at least one of those things…right?!?
