Tasty Thursday: Energy Bites

I love this simple sweet treat.  Energy bites are perfect for afternoon sweet cravings or a quick bite while your out hiking in the woods.  As far as sweet treats are concerned these are pretty healthy.

Energy Bites

Makes 20-25 bites

Ingredients:

  • 1 c. dry oatmeal
  • 1 c. toasted coconut flakes
  • 1/2 c. chocolate chips *
  • 1/2 c. creamy peanut butter
  • 1/3 c. of honey

* chocolate chips can be substituted with dried fruits, berries, chopped nuts, etc.

The original recipe called for 1/2c ground flaxseed and 1 tsp. of vanilla.  I have made it with the additional ingredients, it is yummy with or without.

Prep:

This recipe is super easy.  Simply toast the coconut, then toss all of the ingredients into a bowl and mix.  Once you have mixed everything thoroughly refrigerate for 20-25 minutes.  After refrigeration, remove and roll into balls.  Store in an airtight container and refrigerate.  I store mine in the freezer and when I get hungry for a sweet treat I pull one or two out for a quick snack.  Enjoy!

  1. Awesome photo! I have seen recipes similar to this and definitely want to try. My husband and I are currently not eating “sweets” so I think this would classify as something that is healthy–but yet would satisfy like a sweet would. I love the idea of substituting chocolate for dried fruits. Pinning now. :)
