As I was editing my food photos for the recipe this week, I realized I posted a Mediterranean inspired dish last Tasty Thursday. In my opinion, you can never have too many Mediterranean inspired meals. This has to be one of the absolute easiest crockpot dishes I have ever made…and it is sooo tasty and healthy. The original recipe I stumbled across on A Year of Slow Cooking, however I have altered it a little over time.
Mediterranean Crockpot Chicken
4 chicken breasts (they can be frozen)
1 can of Artichokes, drained
1 large can of diced tomatoes
1/2 jar of pitted Kalamata Olives
2 cloves of garlic, chopped
Oregano, Salt and Pepper to taste
Prep
Combine all of the ingredients in the crockpot. Cook on low for 8 hours, or high for 4-6. It is really that simple! Sometimes I serve it over couscous, last night I served it over pasta. Enjoy!

I just made Giada de Laurentis’ Chicken Cacciatore for the 1000x time and it’s soooo good and satisfying….I bet I could sneak some artichokes in there too next time.
